國際風味評鑑所-ITQI評審團由來自 20 多個國家的 250 多名專業風味專家，以廚師和侍酒師比賽或頂級美食機構的表彰作為風味品評經驗的指標，精心挑選評審團成員，讓世界級美食專家為產品進行評鑑和認證。
ITQI產品評鑒過程採盲測的方式，評審們過程中完全禁止交流，評鑒廚師事先對正在評鑒的產品除了類別以外一無所知。
每種產品都根據5項國際感官分析標準（AFNOR XP V096A 標準）進行評鑒-第一印象、視覺、嗅覺、味覺和質地口感，產品樣品從不相互比較，評審們是根據產品本身的風味特性進行評鑒！

蕙坤有魚食品由HACCP現場評核、經濟部商品檢驗局分等檢驗及SGS食品認證的食品加 工廠製造生產，加工過程從原料入廠、生產、包裝到出廠，皆經過專業人員及精密儀器層層品質控管，全程不使用藥劑或化學添加物，讓消費者安心無虞。
鮪魚在側線的皮下，有一層紅色的肉稱為血合肉(雪合肉)，是為了貯存氧氣，供迴游時肌肉持續運動所需，並且也能夠調節體溫。同時血合肉之游離氨基酸之牛磺酸一項與一般體內之白色肉比較，高出7-10倍，高含量的牛磺酸具有調節細胞滲透壓、防止膽結石形成以及調節神經衝動等生理機能，並具降低膽固醇、血糖、血脂等作用。

清真認證(Halal Certification)源於伊斯蘭教法，規範穆斯林生活食用或碰觸身體的產品不能含有不潔成份(如豬的DNA與酒精、動物血液等)，之後逐漸發展出一套檢驗系統，從原物料出處到產品加工生產，其中各環節如工廠設施、製造機械、包裝儲藏到零售賣場都必須符合伊斯蘭教義，「清真認證」是目前通行國際的食品認證機制，穆斯林可以安心食用，一般消費者也能吃得更健康。
